Serves 4
Ingredients:
- 4 cups cooked cold rice
- 2 eggs
- ¼ cup scallion, finely diced
- 4 tablespoons Lee Kum Kee XO Sauce
- 1/4 teaspoon salt
Directions:
- In a wok, heat the rice then mix in the egg while stirring constantly.
- Add remaining ingredients and cook for another 8-10 minutes.
- Mix well and serve.
